    실험실 소개

    본 연구실은 작물품질의 향상 및 유지를 통하여 소비자에게 향상된 품질(맛, 향기, 기능성)의 농산물을 제공하기 위해 크게 세 분야의 연구주제를 수행하고 있다. 첫 번째는 재배환경 및 elicitor를 이용한 기능성 물질 증진, 두 번째로는 작물의 맛, 향기 등의 관능적 품질 향상 및 관련 생화학 및 대사체학 연구이며 세 번째로는 수확후 과채류의 품질에 영향을 줄 수 있는 저장환경과 작물의 생리에 대한 연구이다.

     

    연구분야

    재배환경 및 elicitor를 이용한 과채류의 기능성 물질 증진

     

    본 연구 주제는 2009년 이후로 계속 진행중인 본 연구실의 핵심 연구 주제로 배추과 작물들(브로콜리 배추, 무)을 중심으로 methyl jasmonate(식물호르몬의 일종으로 해충피해이후의 방어물질 생산을 조절)처리가 브로콜리의 기능성물질인 글루코시놀레이트 증진에 미치는 영향과 관련된 생합성 유전자들에 대한 정보를 수집하였다. 해충피해를 모방한 메틸자스몬산 처리로 indole glucosinolates 및 다른 글루코시놀레이트의 유의한 증가를 확인하였고 이런 물질이 식미와 건강기능성에는 어떤 영향을 미치는지 지속적으로 연구중이다. 현재 연구재단 우수신진연구자 지원사업 (2021.3-2026.2)을 통해 배추과 작물의 글루코시놀레이트 분해산물의 데이터베이스를 구축하여 다른 연구자들이 글루코시놀레이트 분해산물을 GC-MS (기체크로마토그래프 질량분석기)를 통해 손쉽게 동정하고 연구에 활용할 수 있도록 수행 중이며 다양한 환경과 스트레스 상황에서 작물의 글루코시놀레이트 및 해당 분해산물의 생합성을 연구중이다. 해당연구는 배추과작물의 품질 향상뿐만 아니라 이를 재료로 이용하는 김치산업에 활용될 기반자료가 된다.

     

    위 실험은 케일작물에서 250uM 농도의 메틸자스몬산 처리와 10%정도의 해충피해에 의한 피해가 대사체적으로 비슷한 양상을 보이나 메틸자스몬산에 의한 갑작스러운 처리가 방어물질의 급격한 증가와 함께 당류의 소비로 연결된다는 것을 확인한 논문으로 해충의 피해가 배추과 작물에서는 기능성 성분인 글루코시놀레이트를 증가시키지만 당류의 감소로 쓴맛을 증가시킴을 보여준다. 본 연구실은 브로콜리에서 소비자 선호도와 밀접한 글루코시놀레이트의 분해산물을 동정하였고 소비자 선호도와 글루코시놀레이트 가수분해산물간의 관련성을 입증한 연구결과를 Food Chemistry (Chiu et al., 2019)에 출판하였다.

    작물의 맛, 향기 및 관능적 품질 향상

    딸기, 참외, 복숭아, 및 기타 채소류 등 우리나라에서 자주 섭취되는 과채류중 향기 성분에 대한 연구가 미흡한 작물들이 있으며 구체적으로 품종별 향기, 스트레스나 저장 중 향기 변화에 대한 연구가 부족하다. 또한, 어떤 향기가 소비자 선호도와 상관성이 있는지에 대한 산업적으로 중요한 정보의 부재로 소비자의 만족도를 증진시킬 수 있는 농산물의 재배나 육종에 어려움이 있다. 본 연구실은 맛, 향기, 겉보기 색 등 과채류의 중요한 품질인자들을 대사체학적 접근방법으로 선발하고 재배별, 품종별, 저장방법별로 변화하는 관능적 품질을 조사하여 비파괴적 품질측정/판별 및 스마트저장고 운영에 필요한 기반정보 수집 및 활용에 대한 연구까지 확장하여 연구를 수행할 예정이다

     

    위 연구는 태양광 패널 하부에서 작물을 재배하는 영농형태양광(Agrivoltaic)이라는 새로운 작부체계에서 브로콜리의 겉보기 색상이 녹색으로 유지되어 소비자 선호도가 향상되며 추가적인 전기생산을 통해 농가소득에 기여할 수 있음을 실증한 연구이다.

    국내 단일채소로 가장 큰 시장을 가지는 채소는 딸기(1조3000억)이다. 국내에서 많은 품종들이 육성되었으나 딸기향기에 대한 프로파일링 및 수출유망 딸기품종 육성을 위한 품질 및 대사체에 대한 정보는 미비하다. 특히, 품질로서 중요한 인자인 향기에 대한 연구가 부족하기 때문에 품종별, 저장별 다양한 재배법에 따른 딸기의 향기 성분에 대한 정보 축적 및 이를 활용한 소비자 지향적 육종체계의 기초자료를 수집중이다.

     

    수확후 과채류의 품질조사 및 생리연구

    수확 후 이용되지 않고 버려지는 농산물은 30퍼센트에 이른다. 따라서 수확 후 저장 및 관리를 통하여 재배에 투입된 에너지와 노력을 온전히 회수하고 소비자가 활용할 수 있도록 한다면 지구의 식량과 에너지를 더욱 효율적으로 사용할 수 있으며, 소비자와 유통 관련자에게도 도움이 될 것이다. 수확후 과채류의 품질유지를 위해 저장조건 및 살균, 세척 등에 대한 연구와 수출유망 농산물인 딸기, 참외, 고구마, 파프리카, 배 등의 농산물에서 수출시 장애요소를 해결하는 다양한 연구 (갈변억제, 이취분석, 저장성 향상)를 진행하고 있다.

     

    위 연구는 메틸 자스몬산 처리를 통해 증가한 브로콜리의 암예방물질을 수확후 1-MCP처리를 통하여 신선도와 증가된 기능성 물질을 모두 유지할 수 있다는 것을 확인한 연구로 해충피해 이력이 있는 농산물은 특별한 관리가 필요하다는 것을 시사한다.

    참외는 국내6대 과채류중 하나로 손꼽히는 주요 원예작물이지만 전세계적으로 우리나라가 거의 대부분을 생산하고 소비하는 특이한 작물이다. 참외의 과골부위는 유독 갈변이 노란과피 부위보다 쉽게 일어나 품질저하의 요인이다. 최근 본 연구실과 국립원예특작과학원 박미희 연구사 팀의 공동연구로 갈변이 잘 생기는 과골은 큐티클층이 노란과피보다 현저하게 얇기때문에 수분손실에 취약하며 갈변으로 연결될 것이라는 연구결과를 발표하였다. 이밖에도 참외의 저장중 생리변화에 대한 연구를 활발히 수행중이다. https://doi.org/10.3390/foods9091329
